Everything is made to order on a single counter, so the board shifts day to day. The shape of it stays the same: a warm buttermilk biscuit, and a short list of things to put on it.
Where & when
A short window, on purpose.
The biscuits are made fresh through the morning and they go fast, often by half past ten on a good Saturday. There's no afternoon batch. If you want one, the move is simple: get there early.
Hours can shift with the season, so a quick call before you drive down never hurts.

It's Matt, the counter, and the biscuits.
Matt Robbins spent better than a decade behind Knoxville coffee bars before the biscuits took over. These days he runs the place as a one-man show on Market Street, pulling shots and building biscuits to order while you watch.
That's the whole charm of it. The menu changes with the morning, nothing sits under a heat lamp, and the line moves at the speed of one person who clearly likes the work. Knoxville has decided he's good at it.

A few answers before you go.
When are you open?
Wednesday through Saturday, 9:00am to noon. Closed Sunday, Monday and Tuesday. The biscuits often sell out before twelve, so the earlier the better.
Where exactly are you?
800 Market Street in downtown Knoxville, a block off Market Square. There's seating in the arched breezeway and at the window. Public garages nearby are free on nights and weekends.
How does "build your own" work?
You start with a hot buttermilk biscuit and choose what goes on it, from honey and jam to bacon, eggs or chipotle cream cheese. Matt will steer you if you ask. It's all made to order at the counter.
Do you really sell out?
Often, yes. Everything is made fresh that morning by one person, so once it's gone it's gone. Weekends move fastest.
Can you do biscuits for a group?
Matt puts together biscuit packs to go. Send a note through the form below or call a day or two ahead so he can plan for it.
Is there coffee?
Plenty. Matt came up as a barista, so there are lattes, mochas and drip alongside the biscuits.
